"Martha Muffins"

Martha Tea Concentrate
Ingredients
- 2 tablespoons Martha tea
- ¾ cup hot water
Instructions
- Heat water to approximately 200°F.
- Steep Martha tea for 5–6 minutes.
- Strain and allow to cool.
- Reserve ½ cup concentrate for the muffin batter.
Martha Muffins
Ingredients
- ½ cup Martha tea concentrate
- ⅓ cup melted butter or coconut oil
- ½ cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1½ cups flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- Pinch of nutmeg
- ½–¾ cup chopped apples
Instructions
- Preheat oven to 350°F and prepare a muffin tin.
- In a mixing bowl, combine the Martha tea concentrate, melted butter or coconut oil, brown sugar, egg, and vanilla.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Fold the dry ingredients into the wet ingredients until just combined.
- Gently stir in the chopped apples.
- Fill muffin cups about ¾ full.
- Bake for 18–22 minutes, or until golden and a toothpick inserted into the center comes out clean.
Simple Glaze Drizzle
Ingredients
- ½–1 teaspoon remaining Martha tea concentrate
- ¼ cup powdered sugar
- Tiny drop of vanilla
Instructions
- Stir ingredients together until smooth.
- Drizzle lightly over warm muffins.
