Liberty & Providence Colonial Apple Hand PIes

As a final recipe to our America 250 colonial inspired, tea-infused creations, we share a portable, practical, and delicious hand pie. These were the perfect food for busy colonial households. Whether packed for travel, carried into the fields, or enjoyed alongside an afternoon cup of tea, these little pastries made good use of seasonal fruits and preserved ingredients that could be enjoyed long after harvest.


Ingredients

1 package pie crusts
½ cup diced apples
½ cup grated apples
½ cup dried cranberries
⅓ cup Liberty & Providence Tea
3 TBL brown sugar
½ tsp cinnamon
2 TBL butter
1 TBL flour
Pinch of salt
1 egg or cream for brushing tops

Directions

1. Combine apples, cranberries, Liberty & Providence tea, brown sugar, cinnamon, butter, flour, and salt in a saucepan.
2. Simmer 15–20 minutes, stirring occasionally, until the mixture thickens.
3. Cool completely.
4. Cut pie crusts into circles.
5. Fill each circle with a spoonful of filling, fold in half, and crimp the edges.
6. Brush tops with egg wash or cream.
7. Bake at 375°F for 18–22 minutes, until golden brown.
8. Optional: Sprinkle tops with coarse sugar before baking.
