Freedom Strawberry Tea Cakes
Enjoy my favorite of the America 250 birthday recipes that are colonial inspired and tea infused!One thing I admire about colonial cooks is how resourceful they were. Imported ingredients could be expensive, heavily taxed, boycotted or difficult to obtain, so families learned to make the most of what they had. Little was wasted. Even the blue paper wrapped around sugar loaves was often saved and repurposed, sometimes to add a touch of color to cakes and frostings.
That same spirit of creativity inspired these Freedom Tea Cakes. By steeping tea directly into the batter and glaze, every ingredient is put to good use while adding layers of flavor and a patriotic splash of red and blue from the hibiscus, strawberries, and cornflower found in our Freedom blend.
Ingredients:
2 cups flour
1 Tbsp baking powder
¼ tsp salt
⅓ cup sugar
6 Tbsp cold butter
⅔ cup milk
2 Tbsp strongly brewed Freedom Tea, cooled
½ cup diced strawberries
Freedom Tea Glaze:
1 cup powdered sugar
2–3 Tbsp strongly brewed Freedom Tea
Directions:
Brew Freedom Tea double strength and allow to cool.
Combine flour, baking powder, salt, and sugar.
Cut in butter until mixture resembles coarse crumbs.
Stir in milk and tea until just combined.
Fold in strawberries.
Pat dough to about ¾-inch thick and cut into rounds.
Bake at 400°F for 12–15 minutes or until lightly golden.
Mix powdered sugar and tea to form a glaze and drizzle over cooled cakes
